Celery likes a cool to mild climate and doesn't enjoy the extremes of temperature. Its roots are shallow, so celery is sensitive to frost or drought.
Plant seedlings in spring and summer, spacing plants about 30cm apart. Mulch well and don't let the soil dry out. Provide a regular and plentiful supply of water.
Feed generously with a good liquid organic fertilizer every couple of weeks. Well fed plants will produce less stringy stems.
Many organic gardeners prefer white stems, which are achieved by blanching. Blanching is the prevention of direct sunlight from reaching the plant and can be achieved by wrapping milk cartons or newspaper around the stems.
Celery can be harvested by removing individual stems when needed or by removing the whole plant.
