Thyme is a low growing, hardy, perennial herb. It prefers well drained soil in full sun and is drought and frost tolerant. It is one of the most fragrant herbs available and is another of the old traditional herbs for use in English cooking, such as stuffing for roast lamb.
Harvest at any time. Just pick a few stems and remove the leaves by running your finger and thumb along the stem. Chop leaves finely and hey presto.
Thyme will naturally layer quite readily and can be propagated by root division. Cut out one of the lower stems with some root attached and plant in a pot until established enough to plant in your herb garden.
Thyme can also be grown from seed but I find root division easy and reliable.
