Vegetarian Pizza
- Pizza Base - home made or bought
- Pesto
- Tomato sauce
- Spinach leaves
- Tomatoes - 2 medium sized, roughly chopped
- Capsicum - 1, roughly chopped
- Asparagus - 5 spears, chopped to 1 inch lengths
- Cheddar cheese - 1/2 cup, grated
- Button mushrooms - 10, sliced
- Pineapple chunks, half a cupfull
- Mozzarella cheese - 1 cup, grated
Lightly (olive) oil a pizza oven tray and place the pizza base on it. Spread a thin layer of pesto and then a thicker layer of tomato suace on the pizza base. Press a layer of spinach leaves onto the tomato sauce. Spread the tomato chunks, capsicum and asparagus over the spinach leaves. Sprinkle with cheddar cheese. Place slices of mushroom and pineapple chunks over the cheddar. Sprinkle the mozzarella over the mushrooms and pineapple.
Bake in a moderate oven until the mozzarella has browned.
