Pumpkin soup
- Pumpkin - ½ a large pumpkin, cut into chunks
- Bacon - 1 rasher or the equivalent of ham
- Onion - 1 large, chopped
- Chicken or vegetable stock - 1 pint
- Parsley - 1 tablespoon, finely chopped
- Salt and pepper to taste
Fry the onion and bacon together in a stockpot, until the onion is golden and the bacon is starting to brown. Add the pumpkin, stock, salt and pepper, as well as some water if necessary.
Boil until the pumpkin is soft. Add the parsley and blend the soup.
Pumpkin soup is great with a splash of cream.
