Greek style salad
- Lettuce - 8 to 12 leaves, chopped to 1cm2
- Tomatoes - times 2, finely diced
- Cucumber - 4 inch length, finely chopped
- Capsicum - ½ cup, finely chopped
- Parsley - 2 tablespoons, finely chopped
- Coriander leaves - 1 tablespoon, finely chopped
- Feta cheese - ½ cup of 1cm cubes
- Olives
- Olive oil - a dribble
- Pear juice concentrate is a nice final touch
I've called this Greek style salad for want of a better discription and because it has feta cheese and olives in it. You can call it what you like.
Combine ingredients and toss. You could also add some pear juice concentrate as a nice final touch, not very Greek but nice all the same. Stavros's yer uncle, or as a well known chef from my origins often says "Easy peasy!"
