Salmon Patties
- Salmon - 400g (alternatively use tuna or any other fish)
- Rice - 1 cup of cooked rice
- Breadcrumbs - 1 cup
- Celery - 1 stick, finely chopped
- Parsley - ½ a cup, finely chopped
- Lemon balm - 5 or 6 leaves, finely chopped
- Carrot - 1 small, finely grated
- Egg white - times 1
Mix all of the above ingredients and form into patties. Leave them in the fridge for about an hour, to firm up.
Fry in olive oil until golden brown.
