Tabbouleh
- Cracked wheat - 1 cup
- Parsley - ½ cup - finely chopped
- Mint - 3 sprigs, finely chopped
- Spring onions - 5 or 6, finely chopped
- Garlic - 1 clove, finely chopped
- Lemon - juice from half a lemon
- Tomatoes - 2 medium sized, deseeded and diced
- Olive oil - 1 tablespoon
- Salt and pepper to taste
Cover cracked wheat in boiling water for about 1 hour or until the wheat is swollen and soft. Drain and press out any excess moisture. Combine wheat with all other ingredients and mix well.
